Since the mid 1990’s i’ve explored the world of bean to bar chocolate.

With a speciality of Australian and Pacific Island cacao beans. The rich history of cacao in the Pacific starts in the late 1600’s with early plantings of rootstock from South America by the Spanish sailors. In those years cacao was worth more than gold. Then followed German, English and Dutch settlers to the islands , expanding the plantations to what they are today. A rich mixture of flavours and varietials.
