My pairings are based on single origin chocolate made predominantly from Australian and Pacific Island cocoa beans.

Selected for the unique flavours & aroma they contain which are formed during

a 3-7 day ferment.

Then each chocolate is paired with a grape varietal with similar aroma and or flavours.
